Coconut Shrimp Curry

I found this recipe on Instagram. It looked so good, I had to try it.

Ingredients

  • Shrimp Marinade
  • 1/4 teaspoon Black pepper
  • 1/8 teaspoon Cayenne pepper
  • 2 tablespoons lemon juice
  • 1 pound Extra large shrimp
  • Sauce
  • 1 tablespoon Vegetable Oil
  • 1 medium onion chopped
  • 3 cloves or garlic minced
  • 1 tablespoon Fresh ginger minced
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Tumeric
  • teaspoon Ground Coriander
  • 1 teaspoon Curry powder - I used madras curry powder
  • 1 14.5 oz canned diced tomatoes
  • 1 5.5 ounce can unsweetened canned coconut milk

Instructions

  1. Mix together salt, black pepper, cayenne pepper, and lemon juice. Pour Marinade over the shrimp .
  2. Marinate for 30 - 40 minutes
  3. For the sauce
  4. In a 10 inch frying pan heat 1 Tablespoon of vegetable oil
  5. Add chopped onion and minced garlic and ginger. Cook until fragrant
  6. Add salt, turmeric, ground coriander, curry powder. Cook for 1 -2 minutes
  7. Add tomatoes and unsweetened coconut milk. Heat until mixture is hot.
  8. Add shrimp
  9. Cook until shrimp are done
