Vegetable Pasta Sauce

I so enjoy this sauce during the summer months. Zucchini, squash and tomatoes are plentiful at the farmers markets. I make this at least twice during the summer months. It makes a great quick meal. I eat the sauce over pasta or as a side dish


  • 1 medium size zucchini diced
  • Fresh ground pepper
  • 1/2 teaspoon All purpose seasoning salt
  • 1 teaspoon Soy Sauce
  • 1 teaspoon Italian seasoning
  • 1 8-oz can tomato sauce
  • 3 Medium tomatoes diced
  • 2 Medium onions diced
  • 1 clove of garlic minced
  • 1 Medium size yellow squash diced
  • Parmesan cheese for sprinkling on top


  1. In a large saute pan add 2 teaspoons of extra-virgin olive oil. Heat oil
  2. Add minced garlic and cook until fragrant, about 1 minute
  3. Then add remaining ingredients and simmer until vegetables are done.
  4. Serve over pasta or serve as a side dish
